Constantino Ribalaigua was the undisputed Cocktail King of Cuba. He ruled from Havana’s Bar Florida (La Floridita), creating and improving our favorite standards from 1912 – 1952. His bar was actually considered the cradle of the frozen daiquiri. Here he crafted the famous Papa Dobles, often called the Hemmingway Daiquiri named for his frequent guest and admirer. We found a copy of a rare 1937 booklet, signed by the famous bar man, with mixing notes and recipes that we share with you today.
It has been noted by many mixologists that since that era rums have changed. To get the most authentic experience may we suggest using Flor de Caña Extra Dry or Ron Botran Rums – if you can get your hands on them.
