Tangy Passion Fruit Syrup

8 ounces Monin Pure Sugar Cane Syrup
4 ounces Water
4 ounces Lime Juice
1 tbsp Grated Lime Zest
8 large passion fruit or 4 ounces passion fruit nectar

Halve passion fruits and scoop out pulp into a sieve. Rub through a sieve to separate juice and seeds. Discard seeds and measure juice to slightly less than half a cup.

In a small saucepan mix syrup and water. Bring to the boil and boil. Add lime and passion fruit juice, return to boil and boil for 5 minutes. Take off the heat and cool before adding the lime zest. Strain into a container and keep it in the fridge until you prepare your wonderful cocktails.
