Ski Patrol Sour

2 oz Appleton Estate Reserve Jamaican rum
1 oz simple syrup
juice from 1 lemon
1 egg white
Fee’s Whiskey Barrel Aged Bitters

Add first four ingredients to mixing glass, and shake without ice for 30 seconds. Look for a froth of white to be sure egg whites mix. Add ice and shake again for 10 seconds. Strain into a cocktail glass, and once the drink settles, add a sprinkle of freshly-grated nutmeg and a few drops of bitters on top.
