Ginger Syrup

2 cups sugar
2 cups water
2 cups fresh ginger

Cut ginger into 1/8-inch slices. Bring sugar and water to a boil in a small saucepan. Reduce heat to low. Add ginger and cover for 10 minutes. Stir. Strain ginger pieces from mixture. Keep syrup refrigerated in air-tight container.
