Watermelon Bellini

watermelon cocktail24 oz cubed seeded watermelon, frozen
2 tbsp simple sugar
1 lemon quartered
1 bottle chilled prosecco or sparkling wine

Combine frozen watermelon, gomme syrup, juice of lemon, and 8 oz of wine in a blender. Pour about 3 oz of watermelon mixture into 8 champagne glasses. Top with remaining wine. Garnish with lemon twist and wedge of watermelon.
