Pour the gin, lemon juice, and simple syrup into a shaker with ice and shake for 20-30 seconds. Strain into another shaker and then add gold leaf. Dry shake for 30 seconds. Pour the drink into a champagne flute and then add the crème de violette. Top off with prosecco. Mix ¼ cup sugar with ¼ cup boiling water. Stir until sugar is dissolved. Add 4 tablespoons of dried lavender. Let the lavender steep for at least 20 minutes. Strain the lavender from the simple syrup.
