Grind 1/2 cup of Don Pablo Bourbon coffee to medium-fine, add to measuring cup or bowl, fill to top with water. Cover with a clean dishcloth, and let sit for 8-24 hours in the refrigerator. Strain coffee grinds out with a cheesecloth. Add ice, cold brew, Bourbon and Irish Cream into a cocktail shaker. Shake vigorously for 15 seconds, and strain into a Bourbon glass. Sprinkle Don Pablo Bourbon coffee, ground to espresso, on top. Enjoy with friends. Makes one (double ingredients for two etc.).
